- In a large stock pot, on medium heat, add avocado oil.
- Saute carrots, red onions, and garlic for 3-5 minutes.
- Add vegetable stock, green split peas, hemp protein powder, and salt.
- Cover, place on low heat, and cook for 1 hour.
- Blend soup for 2-3 minutes on high until smooth.
- Serve with a drizzle of Ellyndale Extra Virgin Olive Oil and shaved roasted, salted macadamia nuts for added protein and flavor.
