large apple, peeled and chopped
1 tablespoon
Maple Syrup, Organic Grade A Amber Color
½ teaspoon

Directions
- Preheat oven to 350ºF and line a muffin tin with 12 paper liners. Spray with cooking spray.
- Heat coconut oil over medium heat in a skillet. Add apples and sauté 5 minutes. Stir in cinnamon and maple syrup. Sauté for 3-5 minutes longer, until apples are tender. Set aside.
- In a large mixing bowl, whisk together eggs, applesauce, milk, vanilla extract, monk fruit sweetener.
- Add oats, cinnamon, clove, baking powder, and salt. Stir until well combined.
- Scoop 1/3 cup of mixture into each muffin liner. Use a spoon to make an indent in the center. Spoon apple mixture into the center of each muffin.
- Bake for 25-30 minutes, until oat cups are firm. Cool in tins for 10 minutes. Transfer to a cooling rack and cool 10 minutes longer.
