These Reduced Sugar Apple Oat Cups are a cozy, portable way to enjoy the flavors of baked oatmeal without the sugar crash. Naturally sweetened with NOW Real Food® Organic Liquid Monk Fruit and Maple Syrup and made with our hearty Organic Rolled Oats and warm fall spices, each cup is filled with a tender apple topping for built-in flavor and texture. Perfect for on-the-go breakfasts, school snacks, or a flavorful fall dessert.

Ingredients
For Oat Cups
2 large eggs
1 teaspoon vanilla extract
1 ½ cups unsweetened milk
½ cup unsweetened applesauce
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon ground clove
¼ teaspoon salt

For Topping
1 large apple, peeled and chopped
½ teaspoon cinnamon
Directions
  1. Preheat oven to 350ºF and line a muffin tin with 12 paper liners. Spray with cooking spray.
  2. Heat coconut oil over medium heat in a skillet. Add apples and sauté 5 minutes. Stir in cinnamon and maple syrup. Sauté for 3-5 minutes longer, until apples are tender. Set aside.
  3. In a large mixing bowl, whisk together eggs, applesauce, milk, vanilla extract, monk fruit sweetener.
  4. Add oats, cinnamon, clove, baking powder, and salt. Stir until well combined.
  5. Scoop 1/3 cup of mixture into each muffin liner. Use a spoon to make an indent in the center. Spoon apple mixture into the center of each muffin.
  6. Bake for 25-30 minutes, until oat cups are firm. Cool in tins for 10 minutes. Transfer to a cooling rack and cool 10 minutes longer.
