For the apple cider:

Granny Smith apples, core removed and quartered

Honeycrisp apples, core removed and quartered

oranges, peeled and quartered

whole cloves

For the caramel sauce:
¼ cup
date syrup
¼ teaspoon

Directions
- For the apple cider, into a large pot over high heat, add apples, oranges, cloves, and cinnamon. Add enough water to cover the apples. Bring to a boil, reduce to low, cover, and cook 2 hours or until apples are completely soft.
- Meanwhile, for the caramel sauce, into a small bowl, add date syrup, caramel liquid monk fruit, and coconut cream. Whisk until smooth, and set aside until ready to use.
- Once apples are soft, use a potato masher to mash. Cover, increase heat to medium, and simmer 1 hour.
- Into a large bowl, strain apple cider through a fine-mesh sieve. Stir in caramel liquid monk fruit. Let cool slightly before serving.
- To serve, dip rims of serving glasses into caramel sauce. Add apple cider, and then top with vegan whipped cream, more caramel, and a cinnamon stick. Burn the cinnamon stick for an aromatic touch.
