This Cozy Caramel Apple Cider is a warm, festive favorite perfect for holiday gatherings, winter walks, or a thermos at your next tailgate. Made with apples, citrus, and warming spices, this homemade cider is lightly sweetened with NOW Real Food® Organic Liquid Monk Fruit in Caramel for that nostalgic caramel apple flavor without all the sugar. Ingredients
For the apple cider:
5 Granny Smith apples, core removed and quartered
5 Honeycrisp apples, core removed and quartered
2 oranges, peeled and quartered
1 tablespoon whole cloves
2 cinnamon sticks

For the caramel sauce:
¼ cup date syrup
¼ teaspoon Organic Monk Fruit Caramel Liquid
1 tablespoon coconut cream

Whipped cream

Directions
  1. For the apple cider, into a large pot over high heat, add apples, oranges, cloves, and cinnamon. Add enough water to cover the apples. Bring to a boil, reduce to low, cover, and cook 2 hours or until apples are completely soft. 
     
  2. Meanwhile, for the caramel sauce, into a small bowl, add date syrup, caramel liquid monk fruit, and coconut cream. Whisk until smooth, and set aside until ready to use.
     
  3. Once apples are soft, use a potato masher to mash. Cover, increase heat to medium, and simmer 1 hour.
     
  4. Into a large bowl, strain apple cider through a fine-mesh sieve. Stir in caramel liquid monk fruit. Let cool slightly before serving. 
     
  5. To serve, dip rims of serving glasses into caramel sauce. Add apple cider, and then top with vegan whipped cream, more caramel, and a cinnamon stick. Burn the cinnamon stick for an aromatic touch.
