Ingredients
½ cup yellow onion, finely chopped
1 teaspoon minced garlic
1 tablespoon fresh sage, chopped
1 teaspoon fresh thyme, chopped
2 tablespoons tomato paste
1 cup pumpkin purée
½ cup chicken or vegetable stock
⅔ cup unsweetened milk
½ cup freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon black pepper
⅛ teaspoon nutmeg
Directions
  1. Bring a large pot of water to a boil and salt water with 1 teaspoon of salt. Add pasta and cook until el dente. While pasta cooks, heat olive oil in a large pan over medium heat. Add onion and sauté for 5 minutes, until lightly browned. Stir in garlic, sage, and thyme. Cook 30 seconds longer.
  2. Add tomato paste, pumpkin purée, chicken stock, and unsweetened milk. Bring to a low boil.
  3. Reduce heat to low. Stir in Parmesan cheese, salt, pepper, and nutmeg. Simmer for 3-5 minutes to allow ingredients to blend.
  4. Stir in pasta. Serve hot garnished with extra sage and Parmesan cheese.
