These High Protein Vegan Baked Falafel Patties are a flavorful and nourishing plant-based twist on a classic Middle Eastern favorite. Made with chickpeas, fresh herbs, and NOW Real Food® Organic Hemp Seed Hearts for a protein boost, they’re baked, not fried, for a hearty, easy-to-prep meal. Almond flour adds texture and helps keep them gluten free, while a drizzle of homemade tahini sauce ties it all together. Perfect for meal prep, wraps, salads, or a satisfying snack. 

Ingredients
1 can chickpeas, drained
¼ cup chopped white onion
1 teaspoon minced garlic
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 cup fresh parsley
½ cup fresh cilantro
1 teaspoon cumin
½ teaspoon ground coriander
½ teaspoon red pepper flakes
½ teaspoon salt
½ teaspoon baking powder

For Tahini Sauce
¼ cup tahini paste at room temperature
1 tablespoon lemon juice
1 teaspoon Manuka Honey
Salt and pepper to taste
2 tablespoons water
Directions
  1. Preheat oven to 400ºF and line a baking sheet with parchment paper. Combine chickpeas, onion, garlic, cilantro, parsley, lemon juice, and olive oil in a food processor. Blend until ingredients are finely chopped.
  2. Add almond flour, cumin, coriander, red pepper flakes, baking powder, and salt. Blend until smooth.
  3. Add hemp seeds and pulse a couple times until just combined. Form mixture into 10 patties using hands and place on baking sheet. Bake 20 minutes.
  4. While falafel bakes, stir together ingredients for tahini sauce.
  5. Cool falafel patties at room temperature for 5 minutes. Serve warm drizzled with tahini sauce.
