Ingredients

Extra Virgin Olive Oil, Organic

sliced mushrooms
1 cup
celery, chopped
½ cup
cup yellow onion, chopped
½ cup
cup carrots, peeled/chopped
1 teaspoon
minced garlic
1 tablespoon
fresh rosemary, chopped
1 tablespoon
fresh sage, chopped
1 ½ cups
chicken or vegetable stock
½ teaspoon
salt
¼ teaspoon
black pepper
Directions
- Heat olive oil over medium heat in a large skillet. Add mushrooms, celery, onion, and carrots. Sauté for 5 minutes.
- Add amaranth, quinoa, garlic, rosemary, and sage. Stir well and cook 2 minutes longer.
- Add chicken stock and bring to a boil. Reduce heat to simmer. Stir in salt and pepper. Cook uncovered for 20 minutes, or until most of the liquid is absorbed.
- Stir once more. Serve hot.
