This Holiday Amaranth Quinoa Pilaf is a wholesome, herb-forward side dish that brings warmth and color to your seasonal table. It’s plant-based, hearty, and easy to make in under 40 minutes.

Ingredients
1 cup sliced mushrooms
1 cup celery, chopped
½ cup cup yellow onion, chopped
½ cup cup carrots, peeled/chopped
1 teaspoon minced garlic
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh sage, chopped
1 ½ cups chicken or vegetable stock
½ teaspoon salt
¼ teaspoon black pepper
Directions
  1. Heat olive oil over medium heat in a large skillet. Add mushrooms, celery, onion, and carrots. Sauté for 5 minutes.
  2. Add amaranth, quinoa, garlic, rosemary, and sage. Stir well and cook 2 minutes longer.
  3. Add chicken stock and bring to a boil. Reduce heat to simmer. Stir in salt and pepper. Cook uncovered for 20 minutes, or until most of the liquid is absorbed.
  4. Stir once more. Serve hot.
