Almond Flour, Raw

Carob Powder
¼ teaspoon
sea salt

baking powder

½ cup
Coconut Sugar, Organic
1 teaspoon
vanilla extract
Directions
- Preheat oven to 350ºF and line a baking sheet with parchment paper.
- Combine olive oil and ½ cup of carob chips in a double boiler over medium heat until smooth. Remove from heat and set bowl aside.
- In a separate small mixing bowl, combine almond flour, carob powder, baking powder and sea salt.
- Beat together egg, coconut sugar and vanilla extract in a medium mixing bowl until creamy, about 20 seconds.
- Gradually beat in melted carob mixture followed by flour mixture. Fold in ¼ cup of carob chips. Use a cookie scooper to scoop dough on baking sheet 3-inches apart. Bake for 9-10 minutes, until cookies are just set.
- Repeat with remaining dough. Cool on baking sheet for 10 minutes, then transfer to a wire cooling rack to cool completely.
