These Vegan Protein Tostadas are bold, satisfying, ready in under 20 minutes, and perfect for busy weeknights or easy plant-based meal prep. Made with savory NOW Real Food® Organic Textured Vegetable Protein that is simmered in a spiced tomato broth, this high-protein vegan filling pairs perfectly with crispy tostada shells and creamy guacamole. Top with fresh cilantro, red onion, and a squeeze of lime for a fast, flavorful dinner that doesn’t compromise on taste or nutrition.

Ingredients
1 cup veggie stock
1 tablespoon tomato paste
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon dried oregano
¼ teaspoon salt

For Serving:
4 tostada shells
1 cup guacamole
¼ cup chopped red onion
¼ cup chopped cilantro
Fresh lime wedges
Directions
  1. Heat stock and tomato paste over medium heat in a saucepan. Once boiling, reduce heat to simmer. Stir in vegetable protein crumbles. Simmer for 5-7 minutes or until tender.
  2. Add cumin, smoked paprika, oregano, and salt. Stir well to coat vegetable protein. Cook 2 minutes longer.
  3. Spread guacamole on tostadas. Spoon protein crumble mixture over guacamole. Top with red onion and cilantro. Serve with lime wedges.
