This No-Bake Strawberry Gelatin Dessert is a cool, creamy treat that’s as refreshing as it is easy to make. Featuring a simple graham cracker crust and a naturally sweetened strawberry gelatin layer made with full-fat coconut milk, puréed fruit, and NOW Real Food® Beef Gelatin Powder, this no-bake dessert sets up beautifully in the fridge with no oven required. Sweetened with Organic Maple Syrup and topped with fresh strawberries, it’s a fun and fuss-free option for warm weather gatherings or everyday indulgence. 

Ingredients
For Crust
1 ½ cups Graham crackers, crushed

For Gelatin Layer
1 can (15 ounces) full fat coconut milk, divided
2 tablespoons Beef Gelatin Powder
⅔ cup puréed strawberries
½ cup chopped strawberries
Directions
  1. Combine crushed graham crackers with coconut oil in a medium mixing bowl. Stir well to combine until graham crackers are moistened.  Press into the bottom of an 8x8 pan. Freeze for 10 minutes.
  2. Heat half of coconut milk in a saucepan over medium heat until steaming, about 3 minutes. Remove from heat. Whisk in beef gelatin until dissolved. Stir in maple syrup.
  3. In a medium mixing bowl, stir together remaining coconut milk, strawberry puree, and chopped strawberries.  Gradually stir gelatin mixture into strawberry mixture.
  4. Pour strawberry gelatin layer over crust. Transfer to refrigerator for 1 hour or until gelatin layer is firm.
  5. Slice into 9 bars and serve chilled. Store in refrigerator.
