Ingredients
For Crust
1 ½ cups
Graham crackers, crushed

For Gelatin Layer
1 can (15 ounces)
full fat coconut milk, divided
2 tablespoons
Beef Gelatin Powder
⅔ cup
puréed strawberries
½ cup
chopped strawberries
Directions
- Combine crushed graham crackers with coconut oil in a medium mixing bowl. Stir well to combine until graham crackers are moistened. Press into the bottom of an 8x8 pan. Freeze for 10 minutes.
- Heat half of coconut milk in a saucepan over medium heat until steaming, about 3 minutes. Remove from heat. Whisk in beef gelatin until dissolved. Stir in maple syrup.
- In a medium mixing bowl, stir together remaining coconut milk, strawberry puree, and chopped strawberries. Gradually stir gelatin mixture into strawberry mixture.
- Pour strawberry gelatin layer over crust. Transfer to refrigerator for 1 hour or until gelatin layer is firm.
- Slice into 9 bars and serve chilled. Store in refrigerator.
