For Salad

uncooked farro
2 cups
peeled / diced butternut squash
1 tablespoon
Extra Virgin Olive Oil, Organic
¼ teaspoon
salt
⅛ teaspoon
black pepper

arugula
½ cup
mandarin orange segments
⅓ cup
thinly sliced red onion
⅓ cup
dried cherries
½ cup
Almonds, Cinnamon Honey

For Dressing
2 tablespoons
fresh orange juice
2 tablespoons
rice vinegar
1 tablespoon
Manuka Honey
1 teaspoon
fresh thyme leaves, chopped
½ teaspoon
minced garlic
¼ teaspoon
salt
Directions
- Cook farro according to package directions. Transfer to a large mixing bowl.
- Preheat oven to 400ºF and line a baking sheet with parchment paper. Toss butternut squash in olive oil, salt, and pepper. Pour onto baking sheet and bake for 18-20 minutes or until tender and lightly browned around edges. Remove from oven and set aside to cook for 5 minutes.
- Whisk together ingredients for dressing in a small bowl or measuring cup.
- Add butternut squash, arugula, oranges, red onion, and cherries to bowl with farro. Pour dressing over top and stir to coat. Transfer to a serving bowl and top with NOW Real Foods Cinnamon Honey Almonds. Enjoy warm!
