Tropical Multigrain Muffins

Makes 12 muffins
½ cup
packed brown sugar
2
eggs
1 cup
fat-free plain yogurt
1 ½ cups
whole wheat flour
1 teaspoon
baking powder
½ teaspoon
baking soda
¼ teaspoon
salt
¼ cup

 

  1. Preheat oven to 400° F.
  2. Grease the bottoms of 12 regular-size muffin cups with coconut oil.
  3. In a large bowl, whisk egg with brown until the egg mixture doubles in size.
  4. Whisk in remaining coconut oil and yogurt until thoroughly mixed.
  5. In a separate bowl combine flour, baking powder, baking soda, and salt until well combined.
  6. Slowly stir dry ingredients into the wet mixture.
  7. Fold in Oat Bran, pineapple, and papaya.
  8. Fill each muffin cup ¾ full.
  9. Bake 20 to 22 minutes or until golden brown.
  10. Remove from pan and let the muffins cool for 20 minutes
  11. Serve and enjoy!
