Ingredients
2 divided cups Rolled Oats, Organic
2 tablespoons poppy seeds
½ teaspoon baking powder
¼ teaspoon salt
2 eggs
½ cup milk of choice
¼ cup melted unsalted butter
¼ cup fresh lemon juice
1 teaspoon vanilla extract
Directions
  1. Preheat oven to 350ºF and line 8 muffin tins with paper liners. Spray with cooking oil spray. Add 1 cup of rolled oats to a food processor and pulse until finely ground. 
  2. Add ground oats, remaining rolled oats, Allulose sweetener, poppy seeds, baking powder and salt to a large mixing bowl. Whisk to combine. 
  3. Add eggs, milk, melted butter, lemon juice, Lemon Twist BetterStevia™, and vanilla extract and stir until batter is moist. 
  4. Scoop batter into muffin cavities using a 1/3 cup measuring cup. Bake for 30-35 minutes or until toothpick inserted in center comes out clean. 
  5. Cool muffins at room temperature for 15 minutes before serving.
