1 cup
Tapioca Flour, Organic
½ teaspoon
baking powder
½ teaspoon
baking soda
¼ teaspoon
salt
½ cup
Cane Sugar, Organic

large egg
1
large egg white
⅓ cup melted
Virgin Coconut Oil in Glass Jar, Organic (Expired)
1 teaspoon
almond extract
¼ cup chopped
Almonds, Raw & Unsalted
2 tablespoon
Cacao Nibs, Organic & Raw
Directions

Preheat oven to 350ºF and line a baking sheet with parchment paper. In a medium mixing bowl, whisk together almond flour, tapioca flour, cane sugar, baking powder, baking soda, and salt.

Add egg, egg white, coconut oil, and almond extract. Mix well until dough is moistened. Mix in cacao nibs and almonds.

Transfer dough to baking sheet and use damp hands to form into a 7-inch oval loaf. Bake for 30 minutes.

Remove from oven and cool on baking sheet for 15 minutes.

Transfer loaf to a cutting board and slice into ½-1-inch slices.

Place slices of biscotti flat on baking sheet and bake for 20 minutes longer, flipping biscotti after 10 minutes.

Cool for 30 minutes before enjoying.
