Ingredients
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, at room temperature
⅓ cup brown sugar, packed
1 large egg
2 teaspoons vanilla extract
Directions
  1. Preheat oven to 350ºF and line a large baking sheet with parchment paper. Whisk together flour, oats, matcha powder, baking powder, and salt in a medium mixing bowl.
  2. In a separate large mixing bowl, use a hand mixer to beat butter, brown sugar and cane sugar until creamy and fluffy. Beat in egg and vanilla extract until just combined.
  3. Beat in flour mixture until just combined. Use a cookie scooper to scoop dough onto baking sheet 2 inches apart.
  4. Bake for 13-15 minutes until cookies are just set. Cool at room temperature for 15-20 minutes before serving.
