Chicken tenders are a quick-and-easy go-to for busy families, but like many foods we eat often they can get old pretty quickly. We’re taking plain old chicken tenders to another level with a triple coconut combination of organic coconut flour, organic shredded coconut, and our Coconut Infusions™ Non-Dairy Butter Flavor Coconut Oil. The fresh taste and extra crunchy texture will wake up even the most tired taste buds!
- Preheat oven to 400° F and line a cookie sheet with parchment paper.
- In a bowl, combine gluten-free all-purpose flour, organic coconut flour, and salt.
- In a separate bowl, whisk together eggs and milk.
- In a separate bowl, combine shredded coconut and gluten free breadcrumbs.
- Dredge chicken pieces in gluten free all-purpose flour and coconut flour mixture, dip in egg and milk mixture, then coat with shredded coconut and gluten free breadcrumbs.
- Place coated chicken pieces on prepared cookie sheet.
- Drizzle chicken pieces with melted butter-infused coconut oil.
- Place in oven and bake for 8 minutes.
- Remove from oven, flip each chicken tender, then return to oven and bake another 7-9 minutes, until crisp and golden brown.
- Serve warm with your favorite dipping sauce.
