- In food processor, combine avocado, lemon juice, agave nectar, mustard, salt, and black pepper.
- Slowly drizzle in the extra virgin olive oil until vegan mayo has formed.
- Combine with pasta, red pepper, grapes, parsley, and cucumber.
- Serve chilled and enjoy!
