- Preheat oven to 300° F.
- In a food processor, combine basil, pine nuts, parmesan cheese, garlic, salt, and pepper.
- Drizzle in Avocado Oil until fully incorporated.
- Place each cod fillet with 2 tablespoons of pesto in an even layer.
- Place onto a baking sheet with pesto side up and bake in preheated oven for 15 minutes.
- Serve warm and enjoy!
