Hi, I’m Nicole. By day, I work as an attorney for Willis Towers Watson, but in my free time, I love to race and train for ultra-marathons. I began running in 7th grade when I didn’t make the junior high basketball team and have never put away my running shoes. I continued competing at various distances in high school and ultimately had the opportunity to run cross country at Northwestern University in Chicago, Illinois. Following college, I found trail running when I moved to Texas to attend law school at Baylor University School of Law. As an attorney with a busy travel schedule, I am able to take my running shoes wherever I land and get in a training run.
I’m also fortunate to be sponsored by Altra Footwear, and this has given me the opportunity to race around the world. Some of the most beautiful places I’ve been given the opportunity to race include: Patagonia, Hong Kong, France, Switzerland, Italy, and Colorado. I’m currently training to run the Western States Endurance Race in California and the Spartathlon in Greece this September. My husband, Zach Bitter, is also an ultra-runner, and we spend many hours training together on the roads and trails around our home. When it is not too warm, our beloved pup, Stella will join us!
As an endurance athlete, I rely on NOW® to meet all of my daily nutritional needs. I’ll admit that Zach is the primary chef in the family, but we incorporate many NOW products into our daily routine. In particular, we use NOW’s organic coconut oil for its beneficial fat content. I also rely on NOW’s Liquid Iron to support my overall health.* Especially when traveling and trying to adjust to different time zones, my go-to is L-Tryptophan to support quality sleep.*
