Rice Flour is a great gluten-free alternative for wheat flour when combined with other flours for baking allergen-free breads, pancakes, muffins, cookies, pastries and more. It’s also a good thickening agent for gravies and sauces.

Rice Flour Crepes

Ingredients:

1 cup White Rice Flour

1/2 teaspoon salt

2 eggs beaten (or egg substitute)

1 cup milk (dairy, soy or rice)

1 tablespoon butter or margarine

Directions:

  1. Beat eggs in a medium-size bowl; add rest of ingredients and blend until smooth.
  2. Heat a lightly-greased, non-stick skillet to medium temperature.
  3. Pour a 1/4 cup of batter onto skillet and turn skillet to evenly distribute batter in a circle.
  4. Cook about 30 seconds per side.
  5. Add your favorite fresh fruits or preserves and enjoy! Serves 12.
