Breakfast Egg Cheese Casserole

6-8 slices bread, cut in pieces
1 lb. shredded sharp cheese
12 eggs, beaten
2 cups milk
3/4 teaspoon cayenne pepper, plus 3/4 teaspoon dry mustard
Salt to taste (up to 3/4 tsp.)
1 lb. bacon, fried crisp and broken OR sausage, drained
  1. Layer ingredients in 9 x 13" buttered pan, saving some of the cheese to sprinkle on top (Can be put together the night before). 
  2. Bake uncovered at 325 degrees for 45 to 60 minutes.

Some prefer less cheese, some add ½ cup half and half to the milk, some use less eggs.
