Festive Quinoa with Walnuts

Ingredients
2 Tbsp. NOW Organic Extra-Virgin Olive Oil*
1 cup NOW Organic Quinoa Grain*
2 cups vegetable broth
1/2 cup green onions, sliced
1 medium clove garlic, finely chopped
1/2 tsp. sage
1/3 cup NOW Organic Golden Berries*
1/2 cup NOW Walnuts*, chopped
1 cup cannellini beans
1/2 tsp. orange peel, grated
1/4 cup parsley, freshly chopped
1 chopped carrot
1 thinly sliced celery stalk
1/2 tsp sea salt

*NOW products available at your local health food storeIn a 2-quart saucepan, heat 1 tablespoon of the olive oil over medium heat. Cook quinoa in oil 3-5 minutes, stirring frequently, until browned. Stir in broth. Heat to boiling; reduce heat to low. Cover and simmer 15 minutes or until all liquid is absorbed.In a 3-quart saucepan, heat remaining olive oil over medium heat. Cook onions, garlic, carrots, celery and sage in oil for about five minutes, stirring occasionally until onions are crisp-tender and then remove from heat. Stir in cooked quinoa and all remaining ingredients except the parsley. Just before serving, sprinkle with the freshly chopped parsley.
