Stir in broth. Heat to boiling; reduce heat to low. Cover and simmer 15 minutes or until all liquid is absorbed.In a 3-quart saucepan, heat remaining olive oil over medium heat. Cook onions, garlic, carrots, celery and sage in oil for about five minutes, stirring occasionally until onions are crisp-tender and then remove from heat. Stir in cooked quinoa and all remaining ingredients except the parsley. Just before serving, sprinkle with the freshly chopped parsley.
