A quick, easy-to-make side dish or main dish. For a heartier version, you may add additional ingredients of your choice, such as chickpeas, sun dried tomatoes, chopped olives, pine nuts, chopped spinach, or sliced carrots.
|1 cup, rinsed and drained, NOW Real Food® Quinoa*|
|2 cups chicken broth |
|2 tablespoons basil pesto |
|1 tomato, diced |
|Salt and pepper to taste |
- Bring the quinoa and chicken broth to a boil in a saucepan, then cover, reduce heat to low, and simmer until the moisture is completely absorbed; about 15 minutes.
- Remove from heat; stir the pesto through the quinoa.
- Fold the tomato into the mixture.
- Season with salt and pepper.
