Surprise! No Mayonnaise! This tuna salad is full of flavor and much healthier than the usual tuna salad made with mayonnaise. It is very quick if you have the dressing already made in your refrigerator. Tuna salad will never be the same after tasting this.
|2 – 6 ½ oz. cans of water packed light tuna, drained and flaked |
|1/4 cup finely diced celery |
|3 Tbsp. chopped NOW Real Food® Raw Walnuts*|
|3 Tbsp. chopped fresh parsley |
|1/4 cup finSalt and pepper, to taste ely minced onion |
|1 medium head romaine lettuce, chopped |
|1 small tomato, seeds and excess pulp removed and chopped |
|3 medium cloves garlic, pressed |
|1 Tbsp. prepared Dijon mustard |
|1/2 tsp. salt |
|1/2 tsp. cracked black pepper |
|4 Tbsp. fresh lemon juice |
|1/4 cup NOW Real Food® Sunflower Seeds*|
|4 oz. silken tofu |
|½ tsp. Italian herbs |
|2 Tbsp Ellyndale Organics™ Extra Virgin Olive Oil*|
|A little water to thin, if needed |
- Mix tuna, celery, walnuts, parsley, onion, salt, and pepper.
- Blend dressing ingredients in blender, making sure sunflower seeds are ground; add oil a little at a time at end.
- Mix desired amount of dressing with tuna mixture.
- Serve on bed of chopped romaine lettuce with chopped tomato.
