Chicken Quinoa Salad

Serves 4

Ingredients
4 cups water
2 cups NOW Real Food® Organic Quinoa*
2 tablespoons white wine vinegar
2 tablespoons NOW Real Food® Extra Virgin Olive Oil*
2 cups cooked chicken, diced
1-1/2 cups red grapes, quartered
1/2 cup chopped NOW Real Food® Natural Almonds*
  1. Bring water to a boil in a large pot, then add quinoa, stir, and lower heat to a simmer. Cover and cook for 10 to 15 minutes or until seeds are translucent.
  2. Combine vinegar, oil, and salt and pepper in a bowl.
  3. Spoon quinoa in a large bowl and toss with chicken, grapes and almonds.
  4. Drizzle dressing over quinoa and gently stir.
