|2 1-lb cans of chickpeas, rinsed and drained |
|2 Tbsp tahini |
|1/2 cup plain yogurt |
|1/4 cup freshly squeezed lemon juice |
|2 Tbsp Ellyndale Foods™ Extra Virgin Olive Oil*|
|1 tsp. cumin |
|2 garlic cloves, chopped |
|1/2 cup sun dried tomatoes (not oil packed), finely chopped |
|1/4 cup kalamata olives, sliced |
|2 Tbsp fresh cilantro or Italian flat parsley |
|3-4 Tbsp lemon juice |
|Sea salt to taste |
- In food processor or blender, chickpeas, tahini, yogurt, lemon juice, olive oil, garlic, and cumin.
- Process until smooth but not runny.
- Stir in tomatoes, olives, and cilantro.
- Stir in salt to taste.
- Serve with veggies and pita crisps.
