Summertime Chicken Salad (Jane Truchan)
|4 chicken breasts, cooked and chopped |
|½ teaspoon pepper |
|1 - 4 oz. can of small Chinese noodles |
|Slivered almonds (optional) |
|¼ cup sugar |
|¼ cup white vinegar |
|½ cup vegetable oil |
|1 teaspoon salt |
|1 head lettuce |
|4 green onions |
|1/8 cup poppy seeds |
- Combine chicken, lettuce, green onion, poppy seeds, and almonds (if desired) in a salad bowl; mix well.
- Combine sugar, vinegar, oil, salt and pepper in a small bowl; mix well.
- Add dressing and noodles to salad at serving time. Toss and enjoy!
