Summertime Chicken Salad (Jane Truchan)
4 chicken breasts, cooked and chopped
½ teaspoon pepper
1 - 4 oz. can of small Chinese noodles
Slivered almonds (optional)
¼ cup sugar
¼ cup white vinegar
½ cup vegetable oil
1 teaspoon salt
1 head lettuce
4 green onions
1/8 cup poppy seeds
  1. Combine chicken, lettuce, green onion, poppy seeds, and almonds (if desired) in a salad bowl; mix well.
  2. Combine sugar, vinegar, oil, salt and pepper in a small bowl; mix well.
  3. Add dressing and noodles to salad at serving time. Toss and enjoy!
