Chimp Cakes
Adapted from Vegetarian Times, October, 2007
 
This recipe proves that you don’t need eggs or dairy to make a yummy dessert.
 
Makes 18 cakes
 
Ingredients
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 cup NOW Real Food® Sucanat™*
1 tsp. baking soda
1 cup unsweetened applesauce
1/2 cup NOW Real Food® Organic Macadamia Nut Oil*
1 tsp. NOW Real Food® Organic Vanilla Extract*
1/4 cup soymilk
3 small ripe bananas, mashed (1 cup)
6 oz. chocolate chips (1 cup)
1/2 cup NOW Real Food® Walnuts*
  1. Preheat oven to 350 degrees F. 
  2. Line 18 muffin tin cups with paper cupcake liners.
  3. Whisk together flours, Sucanat, and baking soda in a large bowl.
  4. In a separate bowl, combine applesauce, oil, and vanilla. 
  5. Fold applesauce mixture into flour mixture with spatula or wooden spoon. 
  6. Stir in soymilk and bananas. 
  7. Fold in chocolate chips and walnuts.
  8. Fill prepared muffin tins 2/3 full with batter. 
  9. Bake 25 to 30 minutes, or until toothpick inserted in center comes out clean. 
  10. Let stand 10 minutes, then unmold onto wire rack to cool.
