This simple, vegan recipe uses Quinoa, one of the staple grains for the ancient Incas, who called it "The Mother Grain". It has been consumed for thousands of years and is one of the highest grain sources of protein. Serve with berries, bananas, and maple syrup.
- Place quinoa in a sieve, rinse thoroughly, and allow to drain
- Place quinoa in a medium saucepan with water, and bring to a boil over high heat, then cover pan with lid, lower heat, and simmer until all water is absorbed and quinoa is tender; about 15 minutes.
- Mix in apple juice, raisins, lemon juice, cinnamon, and salt.
- Cover pan and simmer for 15 minutes longer.
- Stir in vanilla extract.
- Serve warm.
