Coconut Apricot Truffles

Makes 3 dozen balls

1 1/2 cups NOW Real Food® Raw Almonds*
2 cups NOW Real Food® Unsweetened Dried Apricots*
2 tsp. cinnamon
2 tsp. almond extract
1/2 cup sweetened shredded coconut
  1. In a food processor with the knife blade, thoroughly mix first four ingredients until mixture forms a ball.
  2. Using your hands, roll and press into 1-inch balls.
  3. Roll in coconut.
