Oatmeal Harvest Cookies

Adapted from Taste for Life Magazine, November 2009

Makes about 2 dozen cookies

1 1/2 cup NOW Real Food® Rolled Oats*
1/2 cup whole wheat pastry flour, oat flour, or millet flour
1/2 tsp. salt
1/4 tsp. baking soda
Pinch ground cinnamon, optional
2 Tbsp. chopped NOW Real Food® Walnuts*
1 cup mashed acorn squash or sweet potato
3/8 cup oil (1/4 cup plus 2 Tbsp.)
  1. Preheat oven to 350 degrees.  Mix dry ingredients together.
  2. In a separate bowl, mix mashed squash or sweet potato and oil. Add to dry ingredients.
  3. Drop by heaping teaspoonfuls onto an un-oiled cookie sheet
  4. Bake 10-15 minutes.
