- Combine ingredients in a blender or small food processor and process until smooth.
- Spray a medium nonstick frying pan with cooking spray.
- Pour batter into pan, forming two pancakes.
- Cook on medium-high heat until nicely browned on the bottom and then flip, browning the second side.
- Serve with 2 tablespoons sugar-free fruit spread.
