Rice Griddle Cakes

Yields approximately 20 small cakes

1 cup cooked brown rice
2 cups milk
½ teaspoon salt
1 tablespoon NOW Real Food® Turbinado Sugar*
1½ cups sifted unbleached white flour
2 teaspoons baking powder
1 egg beaten
  1. Soak cooked rice in 1 cup of milk overnight.
  2. Add salt, sugar, shortening, flour and baking powder.
  3. Beat the mixture well, then add egg and remaining cup of milk.
  4. Bake on hot, greased griddle.
