Macaroon Muffins

1 1/2 cups whole wheat flour
1 cup NOW Real Food® Rolled Oats*
2 tsp. baking powder
1 tsp. ground cinnamon
1 cup low-fat milk
1 egg
1/4 cup NOW Real Food® Extra Virgin Coconut Oil*
1/2 tsp. NOW Real Food® Vanilla Extract*
1/2 cup honey
1/2 cup raisins
1 cup NOW Real Food® Unsweetened Organic Shredded Coconut*
  1. Preheat oven to 375 degrees F. 
  2. Lightly grease a 12-cup muffin tin.
  3. Mix together flour, oats, baking powder, and cinnamon.
  4. In a separate bowl, whisk together milk, egg, oil, vanilla, and honey. 
  5. Add to dry ingredients and stir until smooth.
  6. Fold in raisins and coconut.
  7. Pour batter into greased muffin cups. 
  8. Bake 20 to 25 minutes.
