Maple Orange Bread
Adapted from the Vermont Maple Festival Cookbook, St. Albans, Vermont, 2005
NOW’s expert cook, Rosemary Nisbet, made this recipe and treated her co-workers to a sample.  Everyone said it was absolutely delicious!
2 Tablespoons NOW Real Food® Organic Coconut Oil*
1/2 teaspoon baking soda
1 cup NOW Real Food® Maple Syrup*
3 teaspoons baking powder
1 egg, well beaten
3/4 cup NOW Real Food® Walnuts*
Grated rind of one orange
Juice from 1 orange plus enough water to equal 3/4 cup liquid
2 1/2 cups flour
  1. Preheat oven to 350 degrees F.
  2. Blend melted coconut oil, maple syrup, egg and rind. 
  3. Sift dry ingredients. 
  4. Add dry ingredients alternately with orange juice; mix well. 
  5. Add nuts. 
  6. Bake in greased loaf pan for one hour. 

Note: Bread is best baked at least one day before using
