Quick Oat Bran and Banana Muffins

Makes 12 muffins

Ingredients
1 1/4 cups whole wheat flour
1 cup NOW Real Food® Oat Bran*
1/2 cup NOW Real Food® Turbinado Sugar*
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
1/4 cup (1/2 stick) butter, melted
2 egg whites
1 teaspoon NOW Real Food® Vanilla Extract*
2 ripe bananas, peeled, chopped
1 cup chopped NOW Real Food® Pecans*
  1. Preheat oven to 400°F.
  2. Grease twelve 1/3-cup muffin cups or line with paper muffin cups.
  3. Combine first 5 ingredients in large bowl.
  4. Whisk milk, butter, egg whites and vanilla to blend in medium bowl.
  5. Add wet mixture to dry ingredients, stirring until just combined.
  6. Mix in bananas and 1/2 cup pecans.
  7. Divide batter among prepared muffin cups.
  8. Sprinkle remaining pecans over each muffin.
  9. Bake until toothpick inserted into centers of muffins comes out clean; about 20 minutes.
  10. Transfer to rack to cool.
  11. Serve warm or at room temperature.
