Apple Beet Charoset

This colorful fruit and nut chutney pairs well with roasted meats or vegetables. Leftovers make a great condiment on toasted sandwiches. 

Cook’s Review:  “This recipe is easy to make, but the beets “bleed”, so cut or grate them in an area that can be easily cleaned up.  You could substitute NOW Agave Nectar (which has a better glycemic index and mixes well) for the honey.”  Natalie S.

Makes 8 servings

1 Gala or Fuji apple, peeled and grated
2 medium beets (about ½ pound), peeled and grated
3/4 cup NOW Walnuts*,
1/2 cup NOW Organic Dried Apricots*, chopped
2 Tablespoons wildflower honey
2 Tablespoons juice and 1 teaspoon zest from 1 orange
1 teaspoon ground cinnamon
1/8 teaspoon fine sea salt

*NOW ingredients available at your local health food store

  1. In a large bowl, stir together all ingredients.
  2. Let sit for at least 30 minutes before serving to allow apples and beets to soften and flavors to come together.
