Bean Burgers

Adapted from “Recipes for the Semi-Vegan”

Makes 4 burgers

1 medium onion, cut into chunks
2 cups canned beans (preferably white) (Eden)
1/2 cup NOW Real Food® Rolled Oats*
1 Tbsp. chili powder (Simply Organic)
Salt and pepper (Frontier), to taste
1 Tbsp. Ellyndale Organics™ Extra Virgin Olive Oil*
  1. Cut a medium onion into chunks and put it in a food processor, along with 2 cups drained canned beans (white are best here, but any will work), ½ cup rolled oats, a tablespoon of chili powder and salt and pepper.
  2. Pulse, stopping occasionally to scrape the sides, as necessary.  
  3. Taste; if it's too dry, add water; too wet, add more rolled oats, a tablespoon at a time.
  4. Divide the mixture into four even patties and cook them in olive oil, turning them carefully until nicely browned on each side.
