Amaranth or Quinoa Stir-Fry

Serves 4 

2 cups cooked NOW Real Food® Organic Amaranth Grain*
2 Tbsp Ellyndale Organics™ Extra Virgin Olive Oil*
1 onion, chopped
1 carrot, sliced
1 celery stalk, sliced
1 cup mushrooms, sliced
3 cloves garlic, chopped fine
1/2 cup chopped NOW Real Food® Almonds*
1/4 cup NOW Real Food® Raw Sunflower Seeds*
2 Tbsp soy sauce
1 tsp seasoning
  1. Sauté veggies, garlic, almonds and seeds in the oil until vegetables are tender crisp.
  2. Add soy sauce, seasonings and amaranth or quinoa.
  3. Mix well until warmed through.
