Baked Rice Pudding

Good for breakfast, dessert or snack.

Serves 4

2 cups cooked brown rice
2 cups vanilla rice milk
1 1/2 teaspoons cinnamon
3 tablespoons whole wheat pastry flour
1 teaspoon NOW Real Food® Organic Vanilla Extract*
2 tablespoons almond butter
1/4 cup chopped NOW Real Food® Natural Almonds*
  1. Preheat oven to 400°.
  2. Place rice in a mixing bowl.
  3. Using a wooden spoon, break up any clumps of rice.
  4. In a blender or food processor, blend together rice milk, cinnamon, flour, vanilla, and almond butter.
  5. Pour wet mixture into the rice and mix well.
  6. Transfer to a baking dish and bake for 45 minutes.
  7. Remove from the oven and allow to cool for a few minutes.
  8. Serve with almonds.
