Walnut Muffins - Gluten-Free

Ingredients
1/4 cup Goji Berries
1 cup NOW® Gluten-Free Bake Mix
Muffin Mix:
1/2 cup chunky Applesauce
2 tsp Cinnamon
2 tsp NOW® Sucanat
2 tbsp Grapeseed Oil
1/3 cup chopped walnuts
1 Egg, lightly beaten
1 tbsp Sparkling Spring Water
Directions:
 
1. Stir Muffin Mix ingredients together.

2. Fold in: Goji Berries & NOW® Gluten-Free Bake Mix.

3. Bake at 400 degrees for 15 minutes.
 
Makes 6 medium size muffins.
