Pesto Quinoa

Adapted from

A quick, easy-to-make side dish or main dish. For a heartier version, you may add additional ingredients of your choice, such as chickpeas, sun dried tomatoes, chopped olives, pine nuts, chopped spinach, or sliced carrots.

Serves 4

1 cup, rinsed and drained, NOW Real Food® Quinoa*
2 cups chicken broth
2 tablespoons basil pesto
1 tomato, diced
Salt and pepper to taste
  1. Bring the quinoa and chicken broth to a boil in a saucepan, then cover, reduce heat to low, and simmer until the moisture is completely absorbed; about 15 minutes.
  2. Remove from heat; stir the pesto through the quinoa.
  3. Fold the tomato into the mixture.
  4. Season with salt and pepper.
