Spiced Quinoa

Adapted from Taste for Life Magazine, November 2009

Serves 2

2 Tbsp. Ellyndale Organics™ Extra Virgin Olive Oil*
1 tsp. powdered ginger
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. ground turmeric
1 cup NOW Real Food® Quinoa*
1/4 cup finely minced Italian parsley (optional)
1/4 cup finely minced fresh mint or cilantro (optional)
  1. Brown all spices in oil in large saucepan.
  2. Add quinoa and stir well.
  3. Add 2 cups boiling water, cover, and simmer until water is absorbed, stirring occasionally. 
  4. Turn off heat and let stand for a few minutes.
  5. Add optional parsley and mint or cilantro.
  6. Fluff with fork and serve.
