Tutti Fruitti Brown Rice Salad

Adapted from The Whole Grains Council,
Serves 4
3 cups cooked Brown rice
3/4 cup dried cranberries
1 mango, chopped
3/4 cup chopped NOW Real Food® Raw Pecans*
1/2 cup raspberry vinaigrette dressing
1/4 cup plus two Tbsp. fresh chopped parsley, divided
  1. In a large bowl, combine rice, cranberries, mango, pecans, vinaigrette, and 1/4 cup parsley. 
  2. Toss well. 
  3. Garnish with remaining parsley.
