Orange Bulghur Salad
Adapted from “Jean’s Recipes”, from Jean Carper’s “Stop Aging Now” website.
|1 cup raw Bulghur|
|1 1/2 cups coarsely chopped cabbage|
|3/4 cup sliced scallions with green|
|1/2 cup NOW Real Food® Walnuts*|
|1 large orange, cut into chunks with 1/2 cup orange juice, or 1 11-ounce can undrained mandarin oranges|
|2 tablespoons white or rice vinegar|
|1/4 teaspoon salt or to taste|
- Combine all ingredients in a large bowl.
- Chill several hours before serving.
