Orange Bulghur Salad

Adapted from “Jean’s Recipes”, from Jean Carper’s “Stop Aging Now” website.

Serves 6
1 cup raw Bulghur
1 1/2 cups coarsely chopped cabbage
3/4 cup sliced scallions with green
1/2 cup NOW Real Food® Walnuts*
1 large orange, cut into chunks with 1/2 cup orange juice, or 1 11-ounce can undrained mandarin oranges
2 tablespoons white or rice vinegar
1/4 teaspoon salt or to taste
  1. Combine all ingredients in a large bowl.
  2. Chill several hours before serving.
