Carrot, Raisin and Walnut Salad

The tasty combination of tart apple chunks, chewy raisins, crunchy walnuts and sweet carrots in this salad is a big hit with kids of all ages. Low in cholesterol, and a good source of vitamins A and K.

Serves 8

Ingredients
4 large carrots, peeled and coarsely grated (approx. 5 cups)
1/2 cup chopped NOW Real Food® Walnuts*
2 medium apples, cored and cubed
1/2 cup raisins
1 Tbsp Ellyndale Organics™ Extra Virgin Olive Oil*
1 Tbsp lemon juice
1/4 cup veganaise
  1. Add all ingredients to a large bowl and stir gently until well mixed.
  2. Serve immediately, or refrigerate until you are ready to serve.
  3. Store leftovers in the fridge, and eat within 12 hours.
