Chicken Quinoa Salad
|4 cups water|
|2 cups NOW Real Food® Organic Quinoa*|
|2 tablespoons white wine vinegar|
|2 tablespoons Ellyndale Foods™ Extra Virgin Olive Oil*|
|2 cups cooked chicken, diced|
|1-1/2 cups red grapes, quartered|
|1/2 cup chopped NOW Real Food® Natural Almonds*|
- Bring water to a boil in a large pot, then add quinoa, stir, and lower heat to a simmer. Cover and cook for 10 to 15 minutes or until seeds are translucent.
- Combine vinegar, oil, and salt and pepper in a bowl.
- Spoon quinoa in a large bowl and toss with chicken, grapes and almonds.
- Drizzle dressing over quinoa and gently stir.
