Chicken Quinoa Salad
Serves 4
| Ingredients |
| 4 cups water |
| 2 cups NOW Real Food® Organic Quinoa* |
| 2 tablespoons white wine vinegar |
| 2 tablespoons NOW Real Food® Extra Virgin Olive Oil* |
| 2 cups cooked chicken, diced |
| 1-1/2 cups red grapes, quartered |
| 1/2 cup chopped NOW Real Food® Natural Almonds* |
- Bring water to a boil in a large pot, then add quinoa, stir, and lower heat to a simmer. Cover and cook for 10 to 15 minutes or until seeds are translucent.
- Combine vinegar, oil, and salt and pepper in a bowl.
- Spoon quinoa in a large bowl and toss with chicken, grapes and almonds.
- Drizzle dressing over quinoa and gently stir.
