Maple Energy Squares

Adapted from the Pure Canadian Maple Syrup website

The healthy ingredients in this recipe provide on-the-go energy to help keep you fueled throughout the day.

Makes 16 squares

1/2 cup quick-cooking oats
1/2 cup non-fat dry milk
1/2 cup NOW Sunflower Seeds*
1/3 cup all-purpose flour
2/3 cup NOW Pure Maple Syrup*
2 large eggs
1/2 cup chopped dates, dried cranberries or other dried fruit
1/2 cup NOW Dried Apricots*
1/2 cup NOW Almonds*, chopped
1/2 cup NOW Shredded Coconut

*NOW items available at your local health food store

  1. Preheat oven to 350° F.
  2. Spray a 9 x 9-inch baking pan with cooking spray.
  3. In a food processor, combine oats, dry milk, sunflower seeds, flour, maple syrup and eggs.
  4. Puree until almost smooth, about 10 seconds.
  5. Stir in blueberries, apricots and almonds.
  6. Turn into prepared pan.
  7. Sprinkle with coconut.
  8. Bake 20 to 25 minutes or until edges are golden brown and bars are set.
