Whole Grain Almond Granola with Cranberries

Adapted from Whole Foods Market recipes

The ancient grain, amaranth, adds fiber and protein to this simple granola while lending a nutty flavor. Serve with yogurt and fresh berries for a delicious breakfast.

Makes about 4 1/2 cups

1/4 cup honey
2 tablespoons expeller-pressed Ellyndale™ Organic Canola Oil
1 teaspoon NOW Real Food® Organic Vanilla Extract*
1 cup NOW Real Food® Rolled Oats*
1 cup rye flakes
1/2 cup NOW Real Food® Amaranth Grain*
1/2 cup chopped NOW Real Food® Almonds*
1 cup dried cranberries
  1. Preheat oven to 325°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. In a large bowl, whisk together honey, oil and vanilla.
  4. Stir in oats, rye flakes, amaranth and almonds until evenly coated.
  5. Spread on prepared baking sheet.
  6. Bake about 30 minutes or until golden.
  7. Stir in cranberries and let cool completely.
  8. Store in an airtight container.
