Walnut Muffins - Gluten-Free

Makes 6 medium size muffins
 
Ingredients
1/4 cup goji berries
1 cup NOW Real Food® Gluten-Free Baking Mix*
Muffin Mix:
1/2 cup chunky applesauce
2 tsp cinnamon
2 tsp NOW Real Food® Sucanat™*
2 tbsp grape seed oil
1/3 cup chopped walnuts
1 egg, lightly beaten
1 tbsp sparkling spring water
  1. Stir muffin mix ingredients together.
  2. Fold in goji berries and baking mix.
  3. Bake at 400 degrees for 15 minutes.
