Quinoa with Mushrooms

One of the world’s true super foods, quinoa is a complete protein, containing all 9 essential amino acids.  Quinoa is also a great source of fiber, iron, and magnesium. 
This easy-to-make and tasty side dish is similar to a pilaf.
Serves 6
1 Tbsp. Ellyndale Organics™ Extra Virgin Olive Oil*
1 (8-oz.) package mushrooms, chopped
1 onion, chopped
1 clove garlic, minced
1 Tbsp. butter
1 1/2 cups NOW Real Food® Organic Quinoa*
3 cups chicken or vegetable broth
1/3 cup grated Parmesan cheese
  1. Heat the oil in a skillet over medium heat. 
  2. Cook and stir the mushrooms, onion, and garlic in the hot oil until browned, about 5 minutes; set aside.
  3. Melt the butter in a pot over medium-high heat. 
  4. Add the quinoa to the melted butter and let it brown; about 3 minutes.  
  5. Pour the chicken or vegetable broth over the quinoa and bring to a boil. 
  6. Cover and reduce heat to low; simmer 10 minutes. 
  7. Stir in the sautéed mushroom mixture and cook another 2 minutes. 
  8. Sprinkle with Parmesan cheese to serve.
